Sambar, also spelt sambhar, is a lentil-based tangy vegetable stew cooked with tamarind. It is popular in South Indian and Sri Lankan cuisines. Traditionally had with Idli (steamed rice dumplings) Dosa (rice and lentil crepes) or rice, a mix of lentils and vegetables make this a very healthy meal that can also be had on its own as a soup.
